Ebert drafted the first map of the Colorado territory, which was issued in 1862. A surveyor, civil engineer and politician, he invested in the stock and dairy business, and one of his farms used to be located on the land around Green Valley Ranch.
The new restaurant Ebert’s Terrace celebrates local Colorado farms with a creative menu that features native ingredients like Bjorns Colorado Honey, Aspen Ridge Beef and River Bear American Meats. While dishes like Deep Fried Ribs and Whipped Mozzarella Toast might draw eager diners to Ebert’s, it’s the environment that keeps them coming back: the terrace overlooks the golf course and provides expansive vistas of the Rocky Mountains.

The Volante is the largest floor plan in the Carriage House Collection, and it can feature up to four bedrooms and 3.5 baths at more than 2,200 square feet. Each Carriage House floor plan includes a garage, a porch and/or patio, and a fireplace in the great room.
The Meridian Collection at Green Valley Ranch Aurora offers classic, timeless designs for the traditional homeowner. Both ranch and two-story homes are available in the Meridian Collection and all homes boast state-of-the-art energy efficiency features. Six floor plans are available in the Meridian Collection, starting with the Apex floor plan at just over 1,400 square feet. This ranch-style home can include as many as five bedrooms and four baths, with a variety of options for personalizing the basement, laundry room and master bathroom. The largest of the Meridian Collection, the two-story Summit floor plan can include as many as seven bedrooms and five baths spread over more than 3,700 square feet.
